what is the difference between 'deal in' and 'deal with'

Do we need to write subject in formal letters. If yes, please tell if it should be inserted before or after the salutation and it should be underlined or not. Also mention if it is required to explicitly write Subject:--- or not ?

I know that everyone will be knowing this but just to remind ....Carry all the essential (not unwanted) materials required like pens ,pencils,eraser,sharpener,scale,etc . and always carry a stapler (Mainly for maths and geo) beacause if you have used board answer sheets earlier ,you woud know the struggle to attach the maps or the graph sheets to it...
