In the book it is written that all K+ salts are soluble then why it is given that KHCO3 is not soluble?

I have a doubt, might be silly! :
Ions are atoms which have a net charge on them. It means that they have gained/lost electrons to achieve a stable electronic configuration. Now, they are stable. Then, why do they again gain/lose electrons to form a neutral atom?. Reply ASAP.
